Appam Recipe

Appam Batter Ingredients:
- 1 cup raw rice (soaked for 4-6 hours)
- 1/2 cup cooked rice
- 1/4 cup grated coconut
- 1/2 tsp instant dry yeast

- 1/2 cup coconut milk (thin)
Appam Batter Instructions:
- Soak raw rice in water for 4-6 hours. Drain well.
- In a blender, combine soaked rice, cooked rice, and grated coconut.
- Add a little water and blend to a smooth batter.
- Transfer the batter to a large bowl.
- In a small bowl, mix instant dry yeast, sugar, and a little warm water. Let it sit for 5-10 minutes until frothy.

- 1 onion, chopped
- 1 inch ginger, grated
- 2 green chilies, slit
- 1/2 tsp turmeric powder
- 1/2 tsp coriander powder
- 1 cup coconut milk (thick)
- 1 cup coconut milk (thin)
- 2 tbsp coconut oil
- Curry leaves
- Salt to taste
Veg Stew Instructions:
- Heat coconut oil in a pan. Add chopped onion and sauté until golden brown.
- Add grated ginger and green chilies. Sauté for a minute.
- Add turmeric powder and coriander powder. Sauté for another minute.
- Add mixed vegetables and salt. Sauté for 2-3 minutes.
- Pour in thin coconut milk and bring to a boil. Reduce heat and simmer until the vegetables are tender.
- Add thick coconut milk and curry leaves. Simmer for another 2-3 minutes, stirring occasionally.
- Adjust the seasoning if needed.
