Okay, so I stumbled across this image and it completely sparked my imagination! It’s just so whimsical and inspiring, I had to share. Looking at it made me immediately think of baking something cozy and comforting, perfect for a chilly afternoon. So, I dreamt up a spiced apple cake, inspired by the colors and feeling of this beautiful artwork. I hope you like it!

This cake is all about warmth and autumn vibes. It’s moist, flavorful, and relatively easy to make. The aroma while it’s baking is simply divine!

Ingredients:

* 2 cups all-purpose flour * 1 teaspoon baking soda * 1 teaspoon ground cinnamon * 1/2 teaspoon ground nutmeg * 1/4 teaspoon ground cloves * 1/4 teaspoon salt * 1 cup granulated sugar * 1/2 cup packed brown sugar * 1/2 cup vegetable oil * 2 large eggs * 1 teaspoon vanilla extract * 1 cup peeled and diced apples (Granny Smith or Honeycrisp work well) * 1/2 cup chopped walnuts or pecans (optional) * 1/4 cup raisins (optional) ### Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan. Make sure you get into all the corners so the cake doesn’t stick. A little parchment paper on the bottom helps too!
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt. This ensures everything is evenly distributed and the spices really sing!
  3. In a separate bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix well until everything is nice and incorporated. The brown sugar adds a lovely depth of flavor.
  4. Add the eggs, one at a time, to the sugar mixture, beating well after each addition. Then, stir in the vanilla extract. Vanilla really enhances all the other flavors in the cake.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, or your cake will be tough. A few streaks of flour are okay at this stage.
  6. Fold in the diced apples, nuts (if using), and raisins (if using). Gently stir until everything is evenly distributed throughout the batter.
  7. Pour the batter into the prepared baking pan and spread it evenly. Make sure the apples are distributed somewhat evenly as well.
  8. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Keep an eye on it! Ovens can vary.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely. Cooling it in the pan prevents it from sticking or falling apart.
  10. Optional: Dust with powdered sugar or top with a cream cheese frosting. I personally love a simple dusting of powdered sugar to let the apple and spice flavors shine. A dollop of whipped cream works great too!
