Sally by ThuddlestonHow about we whip up some delicious lemon bars? These are bright, cheerful, and perfect for channeling that same vibrant energy I’m getting from the artwork!

Lemon Bar Recipe

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 4 large eggs
  • 2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup lemon juice (from about 3-4 lemons)
  • Zest of 1 lemon

Instructions:

  1. Prepare the Crust: Preheat your oven to 350°F (175°C). In a large bowl, cream together the softened butter and powdered sugar until light and fluffy. Gradually add the 2 cups of flour and mix until just combined. The dough will be crumbly.
  2. Press the dough into an ungreased 9x13 inch baking pan. Prick the crust all over with a fork. Bake for 20-25 minutes, or until lightly golden brown.
  3. Prepare the Filling: While the crust is baking, prepare the filling. In a large bowl, whisk together the eggs, granulated sugar, 1/4 cup flour, baking powder, and salt until smooth. Stir in the lemon juice and lemon zest.
  4. Bake the Lemon Bars: Pour the lemon filling over the hot crust. Bake for an additional 20-25 minutes, or until the filling is set and no longer jiggly in the center.
  5. Cool and Dust: Let the lemon bars cool completely in the pan on a wire rack. Once cooled, dust generously with powdered sugar.
  6. Cut and Serve: Cut into squares and serve. These are delicious chilled or at room temperature.

These lemon bars are the perfect treat to brighten up your day, just like this artwork! I hope you enjoy making them as much as I do. The tangy lemon combined with the sweet crust is a truly winning combination. Now, I’m off to enjoy a slice and maybe even try my hand at some drawing. Inspired by Thuddleston’s “Sally,” perhaps I’ll attempt a whimsical character of my own!
