This artist, Thuddleston, really captured something special. The colors, the composition… it’s all so lovely! Makes me want to try drawing again, haha! But seriously, look at the detail! Speaking of details… this reminds me of needing to make sure my family gets enough nutrients! Like with a delicious and healthy meal. Something everyone loves!

Even I, who sometimes can be a little slow in the kitchen, can make this! You know, something quick and easy for the family after a long day. We all need that, right?

Easy Chicken and Vegetable Stir-Fry Recipe

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 2 carrots, peeled and sliced
  • 1 bell pepper (any color!), sliced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/4 cup stir-fry sauce (store-bought is fine!)
  • Cooked rice, for serving
  • Sesame seeds, for garnish (optional)

Instructions:

  1. First, we gotta marinate the chicken! In a bowl, mix the chicken pieces with the soy sauce and cornstarch. This makes the chicken so tender! Let it sit for at least 15 minutes, even longer is good!
  2. While the chicken is marinating, chop all your veggies! Make sure they are all ready to go!
  3. Now, heat the vegetable oil in a large wok or skillet over medium-high heat. Make sure the wok is nice and hot! Adds that nice “wok hei” (wok breath) flavor!
  4. Add the chicken to the wok and cook until browned and cooked through. Don’t overcrowd the pan, cook in batches if needed! Set the cooked chicken aside.
  5. Add the onion and carrots to the wok and cook for a few minutes until softened. Then add the bell pepper and broccoli florets and cook for a few more minutes until they’re tender-crisp.
  6. Add the garlic and ginger to the wok and cook for about 30 seconds until fragrant. Smells so good, right?!
  7. Return the chicken to the wok. Pour in the stir-fry sauce and toss everything together to coat. Cook for another minute or two until the sauce has thickened slightly.
  8. Serve immediately over cooked rice. Sprinkle with sesame seeds, if you like! So delicious!
